生化/生理作用

脂肪酶可催化水溶液中酯的水解和非水溶液中酯的合成。它们通过水解聚对苯二甲酸乙二酯中的酯键，产生羟基和羧基。
脂肪酶可催化三酰甘油的水解，生成甘油和游离脂肪酸。

粗制品（胰脂酶）。含淀粉酶和蛋白酶活性。
 

单位定义

一个酶活性单位是指在pH 7.4、温度37℃条件下，在1小时内水解三醋酸甘油酯而释放1.0微当量的脂肪酸所需的酶量。（以橄榄油为底物时，所用pH值为7.7）
